Traceability

From the birth of a calf registered by the IGP, Protected Geographic Indication of Veal from Navarra, until its arrival in the butcher shops, a series of identification and control processes exist that furnish, in any given moment, information on the meat being bought.

This process is called "traceability", in other words, control and tracking of the meat from its origin in the countryside to the butcher’s window.

At the time of their birth, the calves are marked with two crotals in their ears with the same identification number that is their ‘identity card’ up to the moment of their slaughter. These crotals act as an element of identification for the different visits of Technicians and Vets to the cattle farms that verify their inclusion or not in the Mark of Origin.
