Cod shells with Roncal cheese

Ingredients:

- 4 empty viera shells
- 500 gm of desalinated cod
- béchamel sauce
- 1 glass of white wine
- 200 gm of grated Roncal cheese
- butter

Instructions:

Place the cod and a little butter in a stainless steel frying pan and put on a slow flame.  Once heated, add the white wine.  Allow to reduce and add the béchamel sauce.  Boil for ten minutes and add half the cheese stirring in with care.  Fill the shells with the mixture and cover with the rest of the grated cheese, a pinch of bread crumbs and butter (a knob in each shell).  Place in the oven until golden brown.
