Roncal cheese and mushroom rissoto¶

Ingredients:
- 200 gm of rice
- 1 medium sized onion
- 2 shallots
- 1 green pepper
- 2 filleted mushrooms
- 100 gm of grated Roncal cheese
- butter
- oil
- stockInstructions:
Place the onion, pepper and shallots oil and a little butter in a saucepan and cook on a low heat for about five minutes. Then, add the rice and mushroom and reheat for three minutes. Add the stock little by little, ensuring compensation for any evaporation. When the rice is ready, remove it from the heat and, using a wooden spoon, stir in the rest of the butter and grated Roncal cheese. Lastly, add salt to taste. (The rice should be creamy)
