The lamb

  • The production zone of lamb destined for meat production covered by the Protected Geographic Indication of "Lamb from Navarra" or "Nafarroako Arkumea" ", including two breeds, 'navarra' and 'lacha', will be constituted by the agrarian counties: I ó Noroccidental, II ó Pirineos, III ó Cuenca de Pamplona, IV ó Tierra Estella, V ó Navarra Media, VI ó Ribera Alta y VII ó Ribera Baja, of the Comunidad Foral of Navarra.

    The zone of birth, nurture and fattening of the lambs of navarra breed destined for the production of meat covered by Protected Geographic Indication "Lamb from Navarra" or "Nafarroako Arkumea", will be constituted bythe following municipalities of agrarian counties:

      Ablitas, Arguedas, Barillas, Buñuel, Cabanillas, Cascante, Castejón, Cintruénigo, Corella, Cortes, Fitero, Fontellas, Fustiñana, Monteagudo, Murchante, Ribaforada, Tudela, Tulebras y Valtierra.
  • Only male or female lambs of the pure races 'navarra' and 'lacha' are suitable for the supply of meat that might be covered by the Protected Geographic Indication.

  • Lambs borne of the sheep from the pure races 'navarra' y 'lacha' reared with an extensive diet or semi-extensive, where the basic feed will be pasture, fodder and cereals following the traditional practice of the geographical zone.

  • Considering the weight, the feed given to the animals and the breed, is distinguishable as follows:

    • Suckling lamb

      Male or female 'lacha' or 'navarra', suckled by the sheep with mother’s milk upto the point of slaughter, with a carcass weight of between 5 and 8 kg for the 'lacha' breed and between 6 and 8 kg for the 'navarra' breed (including head and entrails).
    • Ternasco sheep

      Male or female animal of the 'navarra' race, suckled by the sheep with mother’s milk for a minimum of 45 days from time of birth. During the feed stage, the food they eat will be white straw and a concentrate made from cereals, vegetables, vitamins and minerals. Sheep that have not been weaned after 45 days, on top of that indicated for the feed stage, they will receive mother’s milk. The weight of the carcass of the Ternasco sheep will be between 9 and 12 kg (without head or entrails).
  • All the sheep are identified at the time of their birth with the authorised crotal by the prevailing legislation. A process is thus initiated of periodic controls and tracking from the farm to the moment of slaughter.
