Roncal cheese

Roncal cheese is a cylindrical shaped cheese, with a thick rind, compact and delicately tailored, closed but splattered with small regular shaped holes. It is the colour of white marble going on pale yellow with a strong pronounced flavour, lightly hot, very defined and creamy on the pallet. In its production, only milk, curds and salt may be used and so it never loses its characteristic taste and smell.
